A true Sherry Vinegar can only be produced from wine made from Palomino Fino grapes, grown in the unique micro climate of the Jerez sherry region. This sherry vinegar has an added ingredient that makes it quite unique. Alongside the traditional Palomino grape, 30% of the Pedro Ximenez is added during the aging process. The denser and sweeter Pedro Ximenez wine gives this sherry vinegar a special smoothness and a deep licorice smell, which sets it apart from other vinagres de Jerez.
The exceptional quality of our sherry vinegar stems from the use of only the finest ingredients – the first pressed sherry wines known as "vinos de yema." Slow and careful preparation through a Solera system and prolonged aging in old American oak barrels, produces this mature, complex vinegar with an incomparable flavor, aroma, and color.
